Eggs. The most unhealthy relationship I have ever had in my life is with eggs, and there is no end in sight. Breakfast really is the most important meal of the day and I have tried many different breakfast recommendations searching for the magic one that will keep feeling good and full until lunch. Eggs are the clear winner. At first, I was excited to find the food that worked for me, but after awhile, it got old. I don’t dislike eggs, but I don’t love them either. Eggs, made any way, are simply okay. Now fast forward a couple years and imagine eating a “just okay” food daily. You kinda begin to hate it. I love eggs, I hate eggs, I ultimately need eggs. Ugh.
I have tried running back to old breakfast foods, but after being gone too long, my body starts to crave eggs, even if my mouth is not in agreement. I have even had headaches after going without eggs for too long. I assumed it was the protein, but no other protein rich food or protein mix can compare to eggs for me. I have heard eggs called a superfood and heard that they contain certain fats and nutrients hard to find elsewhere. Whatever it is, I need it.
Now if you ask me which way I like my eggs best, I’ll tell you in a cake. A cupcake. A peanut butter cupcake….with banana frosting. You get the idea. Although the most bearable way to eat them non-baked is in an omelette with a little cheese and turkey bacon and ketchup. However, my Pinterest adventures got me to try something totally wild with my breakfast norm.
This recipe I tried is loosely inspired by Vietnamese Egg Coffee, traditionally called Ca Phe Trung. If you look up an original recipe, it has a frothy topping made from eggs and condensed milk floating on top of dark coffee. At this point you may be either just totally grossed out thinking “raw eggs?!” As a cookie dough aficionado , I can’t get too judgy here. However, there are pasteurized eggs out there so those are what you’ll wanna use if you decide to try this recipe or the traditional Vietnamese version. Of course, do your own research before you try something like this, and if you don’t feel comfortable, definitely don’t try it.

Adapting my own recipe, I cracked a couple of eggs in a Nutri Ninja blender cup along with two tablespoons of sweetened condensed milk, vanilla, cinnamon, and some sweetener. It looked….like this. Not overly excited, but I decided to blend it before I literally threw the whole idea down the drain.

Phew! Okay I was back on board here. This looks way more promising and less disgusting. So now we add the actual coffee. This was intended to be more of a protein shake and I had seen some recipes where people made some variety of egg coffee with the egg blended in. It was intended to be more functional than magically delicious, but I was trying for a balance here.

For the coffee, I used my amazing Ninja Coffee Bar and I brewed it on their signature Cafe Forte setting, which I love.

In it went to the frothy egg mixture for one more round in the blender…..
Okay now that is just beautiful. I have to admit, I thought it was going to turn out like last week where I had to scrap a bunch of recipes. I have to say, I was pleasantly surprised. How did it taste, you ask? Not like egg. It was smooth and airy, with a creaminess. Not a thick syrupy texture like I thought. If someone handed this to me without telling me what it was, I would have never guessed there was egg in it!
Compared to my omelette, this was way tastier! However, there is something about eating something solid for breakfast, even if it isn’t necessarily delicious. I don’t think this will replace my usual, but it was a nice way to get my eggs and still get a break from my omelette.
Oh and I haven’t forgotten that blog post where I actually cook something. Stay tuned in the next couple weeks for one of my favorite chili recipes that my mom requests all the time!
Breakfast Coffee with Eggs
- 2 pasteurized eggs
- 2 T. sweetened condensed milk
- 1/2 tsp. vanilla
- 1/4 tsp. ground cinnamon
- sweetener to taste (optional)
- 8-10oz. strong brewed hot coffee
In a Nutri Ninja Blender, combine the first 5 ingredients and blend on the “Ultra Ninja” setting. If using a regular blender, blend on high for one minute.
While the egg mixture in blending, brew your coffee and pour the fresh, hot coffee into the blender with the egg mixture and blend on the “Ultra Ninja” setting again, or on high for another minute.
Pour the frothy mix into your favorite big mug and enjoy the unique taste for a super convenient breakfast!
