It has been a bit since I’ve posted a coffee recipe and I have been thinking and thinking of what to post, but I haven’t had any inspiration. I still love coffee as much as ever, but I have recently been addicted to the same thing: chicory coffee. This is almost all I have drank for a little over a month. With things being mostly shut down for the past few months, I don’t get to go out for coffee like I used to and I haven’t seen anything I wanted to recreate at home. However, this all changed for me on a recent trip to the grocery store.

They make almond banana milk!! I believe I have posted about banana milk before, but this is pre-made, dairy free and incredible. I had to buy it for sure and I did not regret it.
I first tried an iced latte with the banana milk and I was hooked, but I knew I could get a little more creative, so I came up with this hot banana bread latte.

I can’t tell you how much I love my Ninja Coffee Bar! It has my regular coffee ready for me when I wake up and it can also make things like this. I will give instructions for how to make this without any special equipment, but I do highly recommend the Ninja for coffee connoisseurs that can’t quite break for an espresso machine.

Also, you may have noticed the mug switch in the photos. That’s because I started making this latte on my birthday, and partway through, I was gifted with yet another mug! I have the best friends ever.
I brewed the specialty 4oz. serving on my Ninja using the last of my Grounds & Hounds Anniversary Blend, which is delicious! Once it was brewed, I stirred 2tsp. of honey into it. Of course this is optional, but I love honey, and the local kind I use helps a lot with allergies.
Froth like there’s no tomorrow!
While the coffee was brewing, I microwaved my banana milk until it was nice and hot. Once it was toasty, I added some Watkins brand Butter Vanilla extract and a small bit of ground cinnamon along with a bit of additional sweetener. One of the coolest parts about my Ninja Coffee Bar is that it comes with a built in frother. The banana milk is amazing for lattes because it gets super frothy. I was really pleasantly surprised by this and I love how it looks in pictures!
To complete the latte, pour the banana milk mixture over your “espresso” and admire the beautiful foam! The foam was so beautiful I almost hated to put whipped cream on it. Let’s be real here though, the only reason this didn’t get whipped cream anyway is that I couldn’t find any. I must have got overzealous on my last latte……
Banana Bread Latte
Ingredients
- 1 serving coffee brewed on the “Specialty 4oz.” setting on your Ninja Coffee Bar (or 4oz. double strength brewed coffee)
- 1c. Almond milk with Bananas (Blue Diamond is the only brand I know of that makes this)
- 2 tsp. honey (optional)
- 1/2 tsp. Watkins Butter Vanilla extract or just plain vanilla
- 1/4 tsp. ground cinnamon
- additional sweetener if desired
While your coffee is brewing into an 18oz. mug, microwave your banana milk for 1 minute and 45 seconds. If it isn’t hot enough for your liking, you can put it back in for another 30 seconds.
Add the cinnamon, vanilla, and sweetener to your warm banana milk. You can always add the sweetener after if you don’t know just how sweet you want it yet. 1 packet was perfect for me.
If you decide to add the honey, stir it into the hot brewed coffee as it will melt in better this way.
Froth the banana milk mixture using the forther on your Ninja Coffee Bar. If you don’t have a Ninja, you can use a small hand frother, or even just whisk the ingredients into the banana milk until everything is fully incorporated.
Pour the banana milk mixture over the coffee and enjoy! You can give it a good stir before drinking and add any more sweetener to your liking. I think this would be delicious topped with whipped cream and caramel too!
