We are on our second to last coffee review before my subscription ends, and so far, I am totally thrilled with it and sad about the thought of getting my last bag. I haven’t quite picked a favorite yet since I haven’t tried the last one, but I know this one ranks pretty high.

This Single Origin Mexican Chiapas is a light roast, which really surprised me. It has an awesome flavor that really shines through while being extra smooth. If I had tasted it without looking at the bag, I would have guessed it was a medium roast. Whatever it is, It’s delicious.
I’m not an expert at coffee pairing, but I think this would be awesome with a cream cheese pastry. This coffee is naturally sweet, but not in an overpowering way. The balance of sweetness and smoothness was a complete delight. If I was someone who entertained, I would probably choose this coffee over all the others to serve to company since I can’t imagine any coffee fan not liking this.
It tasted really good when I made it using my Ninja Coffee Bar system, but my personal favorite style was Aeropress. I meant to try it on the Chemex before I did this post, but I was so hooked on the Aeropress brew that I never even got around to it. I plan to try it on Chemex tomorrow morning because I don’t want this bag to run out before I get to try it on my Chemex. The Chemex is a great way to get the full flavor of the coffee while keeping the brew extra clean. The Aeropress is also a very clean brew, but I feel like it brings out the sweetness more than anything. While I really love that, I like to get a full flavor profile too.
I have to admit, in the times we are in, getting something in the mail is a huge joy. My boyfriend just told me that the last shipment is on its way and I am so excited to take my daily walk to the end of our long lane to go get the mail. With all this extra being at home, I have been even more of a coffee fiend than usual. I have time to make it just about any way I want now and when the outside world gets you feeling anxious, there is nothing more calming and comforting than a delicious cup of coffee!
