
So you’re probably wondering what I’m doing posting this on a Sunday. Tuesday is my usual day, but I just had to share this with you early! I will be back to my regular Tuesday posts after this next week, but for now, I’m celebrating hard. Why? Because it’s National Coffee Day! I pregame it all year so when it finally comes, I’m pretty amped for it.
This recipe was inspired by one of my favorite coffee shops. I found an excellent coffee shop in Burlington, IA called the Bean Counter Coffeehouse and Drinkery. They released their fall menu online and they shared a photo of their Dairy Free Peanut Butter Latte. It was gorgeous! Gorgeous enough that I drove the 45 miles to go try it. I know that sounds wild, but in a small place like mine, you have to drive a bit to get to most of the good places.
When I finally tried the latte, I was blown away! They used real peanut butter, not those flavored syrups like most coffee drinks. Don’t get me wrong, I own some flavored syrups and I adore a lot of coffee drinks that use them, but there are some cases where the real deal makes a world of difference and this was one of them. I knew I would be craving this drink for weeks to come, and sure enough, I definitely was. As much as I would like to go to this coffee shop and support them all the time, it’s a bit of a drive and their hours and my work hours don’t really work together very well, so I had to create this recipe so I could enjoy this delicious latte anytime I wanted.
I have to say I’m pretty proud because this is one recipe I didn’t have to work on or tweak. I was drinking this by the next morning and I was in love. I’ve had an embarrassing amount of them since then and each time they taste like a little piece of bliss.

For this recipe, I use my Ninja Coffee Maker. They are a bit pricey but they are sooo worth it! If you enjoy coffee house drinks (and you don’t have a coffee house for 20 miles like me) they pay for themselves pretty quickly. Sometimes I use them to make a cup of regular coffee that’s ready when I wake up, and sometimes I use their special features to make something a little more ritzy like this.

I used their specialty 4oz. setting, which is their version of espresso, with my Smokey Row House Blend coffee. I brewed it straight into a Nutri Ninja blender cup, and when it was finished brewing, I added in the honey, peanut butter, and sweetener. Then, I poured in the warm vanilla almond milk and I blended it on the Nutri Ninja Ultra Blend setting. After a minute, it was smooth, frothy, creamy, and utterly mind blowing! I was pretty proud of myself for this one and I couldn’t think of a better way to celebrate National Coffee Day!

If you don’t have the Ninja items in your kitchen, don’t worry. I love them and I highly recommend them but you can still make this with a regular coffee maker or whichever coffee brewing method you prefer and a regular old blender. Just brew 4oz. coffee double strength and use a regular blender and blend on a high speed for one minute.

Dairy Free Peanut Butter Latte
- 4oz. strong brewed coffee OR the specialty setting on a Ninja Coffee Maker
- 1 T. honey (local is my favorite)
- 2 T. smooth peanut butter
- 10 oz. unsweetened vanilla almond milk
- additional sweetener (2 packets is my personal preference)
In a large blender or personal blender cup, add in all the ingredients. Blend on the Nutri Ninja Ultra Blend setting or blend on high for one minute. Pour the frothy goodness into your favorite large mug and enjoy the magic!
