It’s time for a confession: I am one of “those” girls. Sure I sit at home with my Chemex and brew awesome coffee and drink it black like a true connoisseur, but once I walk into a coffee shop, something else takes over. All of a sudden I’m ordering a “Large raspberry white mocha with almond milk, light ice, and extra whip.” And if they have coconut milk by any chance, I freak out and order it instead, commending them the whole entire time for carrying the best milk there is.
Unfortunately, our closest coffee shop is about 20 minutes away. Many of you probably can’t imagine that and I sure hope you never have to. However, I like to think this has made me a better person. I have had to become my own barista and learned how to make these awesome coffee creations in the comfort of my own home. Here is my personal take on a Frozen Raspberry White Mocha.

As wild as this sounds, I have studied coffee. I worked in a coffee shop for a small time and I discovered that there is so much more to coffee than just putting it in a standard coffee maker and pushing a button. There’s a whole art and science to it. I will definitely be going way deeper into the coffee world on other posts, but for this recipe, I keep it simple by using Elevate Happy Coffee since this is a pre-workout must for me.

I will include a link to try a free sample of this magical caffeinated fairy dust, but if you want to make the recipe without using the happy coffee, you can use another brand you like or even just a scoop of good old instant coffee. I’m not sure how the tastes will compare, but I imagine it will still turn out pretty yummy. Also, I have a complete post coming about what the happy coffee is and what it does for me so make sure to stay tuned!

For that awesome white chocolate flavor, I’m using Torani’s white chocolate sauce that you should be able to find in any grocery store along with frozen red raspberries. I really wish I could tell you that you should be able to find the toasted coconut milk anywhere too, but sadly, I can’t find it around my area. I love Califia Farms brand and I spotted this while we were on a mini vacation. It was absolutely amazing! Even just with the happy coffee on its own, it still tasted wonderful. If you can’t get it, any milk will do. I personally prefer vanilla almond milk or vanilla coconut milk when I can’t get my hands on this.
After putting all the ingredients in the Nutri Ninja for a spin, it came out a little tart so I decided to add some sweetener to it. The fact that the raspberries are real definitely gives it a different taste compared to those coffee shop drinks made with raspberry syrup. You could even add some vanilla protein powder if you wanted to kick it up a notch. I have also considered adding half of a frozen banana. Feel free to experiment with this and let me know what you come up with! All in all, this was a pretty good pre-workout boost. The coffee gives me incredible natural energy and the raspberries give me a healthy dose of filling fiber while keeping my blood sugar steady for the long haul ahead.

Raspberry White Chocolate Frozen Coffee
- 1 1/2 c. milk of your choice
- 1/2 c. frozen raspberries
- 2 T. white chocolate sauce
- 1 scoop elevate happy coffee (or your favorite instant coffee)
- additional sweetener (optional)
Add all the ingredients to your blender and blend on high for one minute. If using a Nutri Ninja like me, make sure to use the 24oz. cup and use the Ninja Ultra Blend setting to blend it all up. Enjoy!
