You might remember from one of my previous blog posts that I mentioned s’mores is about the only thing about summer that I love. In the summertime, everything comes out s’mores flavored and I race to the store to try everything. One thing I noticed right off the bat, is that 80% of s’mores flavored goodies fall short of the mark for me. I taste the chocolate right away, but I seldom taste the graham cracker and I hardly ever taste the marshmallow. This was my experience with t he s’mores flavored coffee creamer. It wasn’t bad by any means, but when I took a sip of my coffee, I just tasted chocolate.
While the beauty of a s’more lies in the beautiful marriage of the three main components, coffee has its own deep chocolatey taste. This isn’t quite a s’mores drink, but I wanted to capture the wonderful essence of a toasted marshmallow in my coffee and I couldn’t find anything that came close on the market. Even the toasted marshmallow syrups I’ve tried have missed the mark for me. While I saw plenty of recipes for making homemade toasted marshmallow syrup, I decided to try something different for myself using the real deal as my main ingredient. It worked out well enough for me to share it with you guys and it was completely refreshing!

The coffee I used for this is from a new small coffee shop in Macomb, Illinois called Bold Brew House. Mom and I found it on our travels and I’m sure glad we did! The building was so tiny, featuring a drive through and one tiny table with 2 chairs inside. The small size of this coffee house didn’t stop them from being one of the coolest coffee places I’ve ever been. If you’re a local roaster using your own beans to make your handcrafted coffee drinks, I already applaud you. If your house roasted coffee tastes mind blowingly awesome, I adore you! Their coffee lives up to its name. My beverage was bold and delicious.
Naturally, I had to peek around while I was waiting for my drink. They had a basket holding bags of different coffee beans that they had roasted as well as flavored beans. When I saw this bag, I knew I had met my match! I’m almost as obsessed with zombies as I am with coffee. I am so glad I bought this bag and I wish I would have bought the other bag they had of this too. It didn’t say what flavor it actually was, but it had a rich coconut butterscotch taste to me and it went so wonderfully with this drink. I tried this with another plain, darker roasted coffee and it was wonderful both ways, but I find I prefer this drink with flavored coffee. If you cant get your hands on any “Zombie Cure,” I would recommend using a highlander grog coffee or a coconut flavored coffee, both of which you can find at your local grocery store.

For this particular recipe, I decided to use my awesome Ninja Coffee Maker, but you can definitely use other methods if you don’t have a Ninja. I made sure to include a recipe for both ways. The main thing is making sure the coffee is strong enough to stand up to the ice. In my Ninja, I used 4 small scoops of medium ground coffee and I placed it on the to go mug setting (third setting from the left) and pressed “over ice brew.” Here’s the catch though: I didn’t brew it over ice like you’re supposed to. That step comes last for this. If you want the marshmallow to melt, you have to use hot coffee.
Once you have your coffee brewed, pour it into a blender because it’s time to get crazy. For this recipe, we’re going to toast two marshmallows. That is one thing I love about having a gas stove- s’mores are a year around thing! Get your marshmallows as toasty as you would like (I like them almost charred) and carefully remove them from the skewer right into the blender along with your hot coffee. Add in your creamer and sweetener and blend it all up. Now it’s time for the ice. Pour your delicious, creamy concoction over ice and get ready for an awesome summer treat.

You can also enjoy this warm if you wish. Simply make the coffee regular strength and follow the rest of the directions without the ice. I’ve had it both ways and it has been yummy each time!

Toasted Marshmallow Iced coffee (using the ninja coffee maker)
- 4 scoops medium ground coffee
- 2 marshmallows, toasted
- 2T. french vanilla OR toasted marshmallow coffee creamer
- additional sweetener to taste
- 1 1/2c. ice
Place your grounds in the brew basket and make sure there is enough water in your reservoir. Place the dial on the travel mug setting and press the “over ice brew” option. DON’T BREW OVER ICE. This comes later in the recipe. Place the strong, hot coffee in a blender along with the toasted marshmallows, coffee creamer, and sweetener and blend until the marshmallows are fully dissolved and incorporated, about one minute. Fill a 20oz. metal cup with ice and pour the hot concoction over the ice. Stir well and enjoy!
Toasted Marshmallow Iced Coffee (no special equipment needed)
- 1c. hot coffee, brewed double strength
- 2 marshmallows, toasted
- 2T. french vanilla OR toasted marshmallow coffee creamer
- additional sweetener to taste
- 1 1/2c. ice
Brew your coffee using your method of choice- anything from a french press to just a regular coffee maker will work great. Add the hot coffee to a blender along with the marshmallows, creamer, and sweetener. Blend for about a minute, until the marshmallows have dissolved and are completely incorporated. Fill a 20oz. cup with ice and pour the marshmallow coffee over the ice. Stir and enjoy!
